Soaking sliced eggplants in water prevents discoloration and darkening.

What’s the proper way to cook spaghetti and other types of long pasta?

Hold the pasta in a bunch and put one end in the water. As the ends of the pieces soften, bend the pasta slightly and gradually feed the rest into the water.

Is there any way to keep fat from spattering when I’m frying?
