Oatmeal Raisin Cookies:
Ingredients:
- 1/2 cup Granulated White Sugar
- 1/4 cup Brown Sugar (Packed)
- 1/2 cup Margarine or Butter (Softened)
- 1/2 tsp. Pure Vanilla Extract
- 1 pc. Egg
- 3/4 cup All-Purpose Flour
- 1/2 tsp. Baking Soda
- 1/4 tsp Salt
- 1 1/2 cup Quick Cooking Rolled Oats/li>
- 1/2 cup Raisins
- 1/2 cup Optional: Walnuts, Pecans or Pine Nuts (Chopped)
Baking Instructions:
- Preheat oven to 375 F.
- Place a parchment paper on the cookie sheet and set aside.
- In a mixing bowl, combine the brown and granulated sugar, margarine until light and fluffy. Add Vanilla and the Egg, blend well until fully combined.
- Mix in the remaining dry inqrendients: Flour, Baking Soda, Salt, Oats and Raisins.
- Use a spoon to drop the mixture to the baking sheets. Place each cookie 2 inches apart.
- Bake for 7 to 8 inches until light golden brown in the edges.
- Let it stand for 5 minutes before moving it to a tight container.

Preparation Time: 45 Minutes
Yields: 2 to 3 1/2 Dozen
Altitude Change: Increase Flour to 1 cup.
