STICKY CHICKEN
serves 4

ingredients

  • 1 tspn salt
  • 2 tspns paprika
  • 1 tspn cayenne pepper
  • 1 tspn onion powder
  • 1 tspn thyme
  • 1 tspn white pepper
  • 1/2 tspn garlic powder
  • 1/2 tspn black pepper
  • 1 ready-to-cook 1lb. roating chicken
  • 1 cu chopped onion

directions

  • In a small bowl mix all spices
  • remove giblets from chicken, clean the cavity welland pat dry with paper towels
  • rub spice mixture into the chicken (inside out); making sure its evenly distributed and in deep under the skin
  • place in resealable bag, seal and refrigerate overnight
  • when ready to roast, stuff chicken with onions and place in a shallow baking pan
  • roast uncovered at 250F for 5 hrs. After first hour bastr the chicken every 30min or so with pan juices.
  • let chicken rest for about 10min before carving./li>
